Cooking with the Seasons: Embracing Nature’s Rhythm in the Kitchen
As a chef, I’ve learned that the best meals don’t start with a recipe—they start with the seasons. Cooking with the rhythm of nature isn’t just about freshness; it’s about respecting the land, supporting local farmers, and letting ingredients shine at their peak.
Spring brings the first tender greens, vibrant citrus, and earthy mushrooms, inspiring light, refreshing dishes. Summer bursts with juicy tomatoes, sweet berries, and crisp cucumbers, perfect for bright, sun-kissed flavors. Fall ushers in rich squashes, wild mushrooms, and root vegetables, calling for warm, hearty meals. Winter slows us down with citrus, hearty greens, and preserved foods, a time for slow cooking and deep flavors.
At Mendocino Grove, in private dinners, and throughout my culinary journey, I let the seasons dictate my menus. Whether it’s a simple farm salad bursting with just-picked produce or a slow-roasted dish infused with the depth of autumn spices, every meal is a reflection of the moment we’re in. Cooking this way isn’t just about taste—it’s about connection. It’s about building relationships with the farmers and producers who dedicate themselves to growing the best ingredients.
When I lived at Earth N’ Us Farm in Miami, I saw firsthand how deeply food connects us to the land. The garden provided fresh herbs and vegetables for our Love and Vegetables dinners, and every meal was a direct reflection of what was growing around us. That experience shaped my approach to food—letting nature take the lead, rather than forcing ingredients into a dish out of season.
Cooking with the seasons also invites mindfulness—it encourages us to appreciate where our food comes from, how it’s grown, and how it connects us to the world around us. It’s a way of eating that nourishes not just our bodies, but our relationship with the planet.
